In Puerto Rico, there are many different types of empanadas you will be able to try. The pizza empanad combines some of the best flavors, pizza and the flaky crispy crust of the fried empanadas!
Ingredients
For this recipe you will need store bought or homade empanada dough, pizza sauce, shredded mozzarella cheese, pepperoni slices, italian spices, and vegetable oil
Preparation
Add 14oz of pizza sauce, 1 pound of shredded mozzarella cheese, 12oz of pepperoni slices, and 2 teaspoons of italian spices to a large bowl.
Combine the ingredients well.
Use the rolling pin to roll out empanada dics into 6" circles, make sure they are not too thin.
Place a spoonful of the pizza mixture onto the center of the disc
Moisten the edges of the edges of the dough and fold the dough over into a half moon shape.
Use a fork to score the edges of the dough.
Heat up 6" of vegetable oil in a large pot.
Carefully add 2-3 empanadas into the oil once boiling.
Flip around and cook until all sides are golden brown and have bubbles on the surface of the empanada.
Take out and drain the oil from the empanada using a plate with a paper towel on it
Be careful when enjoying as the filling will be hot, but full of flavor!
