Tembleque is a thick delicious cinnamon flavored coconut custard. Tembleque means to "wiggly" or "shake" which makes sense as this treat has a jello like consistency!
Ingredients
To make this delicious treat, you will need individual dessert cups, 1/2 cup of sugar, 1/2 cup of cornstartch, 1/4 teaspoon of salt, 4 cups of coconut milk, 1 teaspoon of vanilla, and cinnamon for garnish and taste.
Preparation
Start by combining sugar, cornstartch, and salt in a saucepan. Gradually whisk in all the coconut milk.
Turn on the burner to medium heat, then add the vanilla and a pinch of cinnamon to the mixture.
Whisk continuously until the mixture begins to boil, while boiling, whisk softly for a few minutes until the mixture becomes thick.
Remove the mixture from heat, and pour into the individual dessert cups.
Then shake the molds and lightly tap them on the counter to release air bubbles. Cover the desserts and allow them to cool in room tempurature.
Refigerate for 4 hours, or until set, depedning on the size mold chosen
Top with cinnamon and coconut flakes for more flavor!
